Level up your stir fry skills with this garlic and ginger shrimp dish!
In Asian cooking there is something called Wok Hei which imbues food with those elusive, smoky flavors that are oh-so-good! It's incredibly hard to achieve at home, but home chefs, ranging from amateur to sophisticated culinary savants, are completely obsessed with trying to recreate that smokiness at home. A lot of the skill that comes inherent with being able to sear at very high heat (i.e. at or above smoke point) is getting access to a cast iron wok, as opposed to a non-stick carbon steel counterpart. But, if you don't have the time nor energy to properly season & maintain cast iron, stir-frying on a non-stick carbon steel wok might come as close as you get in terms of replicating that elusive charcoal-y, burnt taste.
