But, did you know that it's possible to make a vegetarian version of this showy, versatile Spanish favorite without the army of mussels, shrimp, and protein? Cue the meatless paella. Yes, meatless. You heard us right! This recipe is the perfect antidote for meat-lovers taking a break and veggie lovers alike! It's super easy to make, and is the perfect crowd-pleaser! Just make sure to not over-stir (it's not a Risotto!) unless you want your dish to turn into a gummy mess! And because the upfront cooking for a paella goes by in a flash, it might be worth to prep everything ahead of time! P.S.
