The trick is instead of rolling the mat into a cylindrical shape, you want to keep it as square as possible. And voilà, you have square mosaic sushi. What's not to love?  This Japanese take on a Hawaiian classic is a must-try if you're in the mood for some sushi and carbs. The ginger-based Shoyu dressing paired with the sliced Nori as a garnish, are the perfect combo! These are basically rolls within rolls. Basically, you make five 'mini' cylindrical rolls encircling a cheese-stuffed fish cake in the center, and use a seaweed sheet to wrap around.
